Let me start by saying I am not a pro driver by any means... I have been tuning with Vit I am on my 6th session now and I find that nailing these 3rd gear pulls correctly is a complete b**ch as I can only datalog during the day and there is usually traffic anyone have any advice on making this a little easier.

Pick another time of day or another section of road. You should only need half to three quarters of a mile or so. The biggest key is having enough spacing from other vehicles. Just make sure you can see all around to be aware of cops.
