Hello:

Does anybody know how to take the whole dashboard out? I'd like to repaint it ....
DYI instruction would be really appreciated.

you could go through some of the accessory install guides to get pieces of a diy on tearing things apart.
example - xm radio install tears into the dash

ambient light/foglight installs would also have pieces of dash removal... looking through those would at least give you a good start

Do you guys maybe have on documentation on a full dash removal? Some documentation shows only visor removal which is easy but I am not sure about the rest how difficult that would be.

What you're looking for is mainly found in the Service Manual or online through Service Express.
The Service Manual is around $150 but isn't available yet. You can get access to Service Express for $10 for 3 days, which just might be what you're looking for.
