I bought a bottle of official, genuine Honda paint for my color. I used it to cover up some rock chips, but it looks like the color isn't a 100% match. I was wondering if this is normal?

Yea it does. Door Jam says NH797M, while the bottle say 08703-nh797mah-pn. Unless these extra numbers mean for a different application. The Dealer checked my car and picked it out of me as well.
You could also try these guys and get a paint pen. Their color matching is pretty dead on. Just input your year, make, model and go from there. You might want to watch some youtube vids of using the pens and just for touchup tips in general. Feathering can help hide the blemish as well.
Metallic and Pearl paints look very different between being sprayed on and painted on. Mixing in a little clear (or better yet, paint thinner) would make it match a bit more
