I'm sort of nervous to do the install myself, even though I have a ton of experience with everything, only because I just bought the car 4 days ago. The only thing I'm really worried about is buying from these guys.

You have zero to worry about ordering from them, that I can tell you. They've been a vendor with myself on other sites, as well as this site for over 7yrs. They are a legit dealership in northern ohio, and are the real deal. Feedback thread if you'd like to look

You definitely have nothing to worry about with CHH they are excellent! I can't say the same for another dealership in Rhode Island that sells online
 
The only thing that I dislike about the installation kit, is that the button for the floor lights, is the same button for the fog lights. I feel like I would only want one or the other just because of that.

The fog light switch is built into the steering column in the same switch as the headlights (see installation manual).
The ambient light kit switch is in a completely different position.

When I watched the installation video, it showed them installing a button next to the traction control that looked like a half sun. The button for the fog lights was the same one as the ambient lighting kit

that button ^^ is for the ambient lights to be turned on/off.

at around 6 min + into the video they replace the stock stalk for one that has the fog switch on the stalk.
 
They install the same button as shown above in the fog lights video. They're both a half-sun.
Can you link the fog lights video you are referring to?
I can assure you that the fog light switch is not the same as the ambient light switch.
 
It's the CHH video. I watched both of them (Ambient lights and fog lights) and the button they use to install both is the "Half Sun" button shown in my screenshot above.

like 6:11 seconds into that vid - "replace the combination switch" - that's the fogs

what you're seeing at 8min is just them hooking wires up to the switches. They most likely installed the fogs on a car that they installed the ambient light kit on prior.
