I know you mentioned being hard on cutting boards. If you want to bring them back to life, block bacteria etc, you can use food grade mineral oil to recondition them, your wooden spoons or anything else similar. Some grocery stores carry it as well, but look for something like this - mineral oilTurduckin.
In-law bought one for Canadian Thanksgiving we never made. Smoked it on the Weber kettle. Turned out great.

Yes, i want to use chuck roast next time. dried chilies are expensive, but i want to use them next time too.I made some chili recently with dried chilis instead of chili powder. That’s a whole new ball game doing that. Also used chuck roast instead of ground beef. Worth a try.
