I talked to a local mechanic and car builder and quoted $300 for the proper installation and tuning of a 50 shot kit On a stock Si. He recommends colder plugs and I can't seem to find which plugs will work any help?

And that sounds insanely cheap. Like unbelievable. You have hondata flashpro already? A lot of tuners charge $100-300/hr for tuning services let alone the install labor cost/price for the kit itself.

He told me he would have it's running safely on the car and wired up. Also tune for a "progressive" shot as he called it. And I don't have flash pro a this moment I was told that colder plugs would work for a 35-55 shot.

Ok, so it's just the install and putting jets in. Please keep us updated, I've been pretty tempted myself to throw a wet kit on.

You can run nitrous without flashpro, but there will be no "tune". There also isn't a way to datalog, or see knock values, or see how rich/lean you are. Some people run that way, and some tune for specific things with flashpro.
